INDIAN FOOD AND LONG WALKS.

Yesterday was Sunday and started lazily on the couch with parotta topped with cream cheese, brinjal pickle (spicy aubergine) and coriander. Could eat this every day at the moment!  Later on when D. had left for work Linda came over for dinner. I decided to stay on the Indian theme and improvised a curry! I used garlic, ginger, fresh chilli, cumin seeds, coriander seeds, a bit of paprika and a pinch of garam masala, then an aubergine (LOVE aubergine) and sweet potatoes topped with coconut milk, crushed tomatoes and a bit of tomato paste. Served on rice with a side of stuffed okra, pretty delicious if I may say so myself! Love that we're back on with our Sunday hangouts, soon Kat will be back as well and our little trio will be complete ❤ Today it was time to go back to work! I was actually really excited about this, as my work entails looking after two amazing little girls whom I'm super close to. After dinner with Linda yesterday I was inspired to get back into walking to work as well, we're both very much in the new year-spirit and making the best of 2019 so this felt like a really good start.  There are piles of Christmas trees discarded on every other street corner, even though it was only two weeks ago it feels so distant already. I'm so ready for new beginnings, and for spring to start!! Might have to wait another little bit for that though, it is only January after all.. oh well, staying positive and am trying to make the very best of every day!
