Delicious vegan and healthy butternut squash – banana bread recepie!

So for our ”friendsgiving” dinner I made a pumpkin-banana bread, a super simple and healthy recepie and so easy to make. Even though I didn’t have a recepie to follow and no exact measurements it turned out really good! I’m gonna share the recepie with you here step by step so you can all try it at home!It’s naturally sweetened and in this repecie I’ve used a flour made of chick peas and yellow split peas for more protein. I like my bread and cakes very soft and juicy in the middle but if you prefer a more dry cake just bake it in the oven for a few minutes more.Sorry that I can’t give more exact measurements because I just didn’t have any at home. Just do what I always do – cook with feeling! ;)  Butternut squash – banana bread So here is all the ingredients you need: -       3 bananas -       1 small butternut squash (or 1 can of pumpkin puree) -       About ½ cup of coconut oil -       About 2,5 cups chick pea/yellow split pea flour -       3 tsps. baking powder -       Chia-flax seed egg (2 tsps. Chia seeds + 2 tsps. flax seeds + water) -       Cinnamon (up to you but I took like 2 tbs.) -       Pumpkin spice (about 1 tbs) -       Seeds and nuts like pumpkin seeds and walnuts (I took about a handful of each) First, put on the oven for 180 ° C.Then prepare the chia-flax seed egg so it have time to soak. Use so much water so it covers the seeds and a little bit more, the ”egg” should be thick but not too firm when it’s been soaking for a few minutes. Stir and put aside. Then cut the squash into small pieces and cut off the skin of it. Scrape out the seeds but save them, it’s super yummy to roast them in a pan as a snack!Cover the squash with water in a saucepan and let it boil until soft, approximately 20 min. Let it cool down. In the meantime mix flour, baking powder, cinnamon and pumpkin spice in a bowl. Put pumpkin and melted coconut oil in a blender and mix it together. Then add half of the flour mix and half the amount of bananas and mix it together. Pour the batter in a big bowl and add the ”flax-chia egg”, nuts and seeds, cinnamon, pumpkin spice, the rest of the flour and the rest of the bananas. I like to mash some bananas and put it in last to get some chunks in there.Stir with a spoon.  Then pour the batter into a baking tin with wax paper on it and add some more nuts and seeds for decoration. I got some batter over so I made a few cup cakes of it aswell for my roomates (just make sure to take them out from the oven after like 5-7 min).Let it bake in the oven for like 30 min, check it with a thin stick and then add minutes until you get the texture you want. I had it in the oven for like 45 min. Voila! Look how beautiful it is! This bread is soooo tasty and super duper healthy! :DI like to enjoy this bread warm with some peanut butter, chocolate spread or just some vegan butter. Yum. You can also add chocolate or cocoa in the batter and let it bake together in the oven if you like chocolate, it’s also really yummy.Just play and experiment with whatever you feel like, maybe  add some dried fruits like raisins or dates? Or make it more christmasy with saffron or cardamom?Only your imagination sets the limit!
