MY VERY FIRST RISOTTO.

On Saturday I made my very first risotto! So very strange that I've never actually made one from scratch before. For someone who loves cooking, this needed to be rectified.  I used dehydrated shiitake mushrooms and the water I re-hydrated them in (important! Added loads of flavour), dry white wine, fresh parsley and lots of parmesan. That was pretty much it! I had always had this idea of risotto being quite a complicated dish, but as long as you keep your eye on it (and keep stirring) it was surprisingly simple.  Set the table to a very excited Leo ❤ It's starting to feel a bit weird that we're not going to have a dog at home come Sunday. Who's gonna come running for cuddles as soon as I step inside? Who's gonna beg for food every two seconds? Who's gonna nudge my face in the morning until I wake up? Also ⬆😍 Big success! It's incredibly rich as well, so I had dinner sorted for the next day already :))))  D. put on some music and Leo napped on his arm. Cosy Saturday night.
