lens stew with curry

Good evening!🌙We just enjoyed the best lens stew I have tasted, we do this stew very often.So I really want to share the recipe with you guys, it's so good and very easy to cook.I will write the original recipe here, and below it I will write some few changes we do when we cook it to get it even more tasty, but I can recommend you to try the original first and after that start to change it🍲 For 4 servings : 4 servings of rice2 dl dried red lenses1 yellow onion1 tablespoon of grated fresh ginger1 teaspoon of sambal oelek1 tablespoon of oil2 garlic cloves1/2 tablespoon of curry2 teaspoons of tomato puree5 dl of vegetable broth1 can of coconut milk (400 ml)1/2 cauliflowers head250 g baby plum tomatoes1 limesalt and pepper65 g of baby spinach1 dl cashew How you do :  1. Boil the rice according to the instructions on the package.2. Rince the lenses and let them drain.3. Peel and chop the yellow onion. Peel and tear the ginger.4. Fry the yellow onion and sambal in oil in a large saucepan. (I use a large frying pan)Squeeze garlic into the saucepan and stir in ginger, curry and tomato paste.Add the lenses, broth and coconut milk. Boil under stirring and simmer for about 10 minutes under a lid.5. Cut the cauliflower into smaller pieces. Put them in the saucepan and cook for another 10 minutes.6. Cut the tomatoes into halves and the lime into slices.7. Taste with salt and pepper and turn spinach and tomatoes down into the saucepan.8. Serve the lens stew with rice, nuts and lime slices. Some changes I usually make :  1. I recommend taking 1 tablespoon sambal oelek instead of 1 teaspoon, and also try sambal garlic instead of the usual.2. I usually chop a red chili that I put in it to.3. Sometimes I have 1 teaspoon of red curry paste in it. 4. We don't usually have tomatoes and spinach in it because we don't like to heat that two ingredients up again if something is left to the day after. Just try to add whatever you like, there's no wrong. All the ingredients except the onion. 🌶 Fryin the onion with sambal oelek. All the ingredients except the cauliflower, tomatoes and the spinach is added.  First boil it up and then let it simmer for 10 minutes under a lid (hahaha, I don't have a lid for my frying pan, so I just use aluminum foil, it works great) When it has shimmers for 10 minutes, add the cauliflower an boil for 10 more minutes. Ready to eat! Today I ate topped it with soy and sweet chili sause!
